But back to Ann's question.... maybe you can just do the same process with the broth you are about to create as the Vietnamese do when making Pho. I am guessing they also work in an environment where growth process and meat processing procedures are in question. They dump the bones in an initial shallow pan of boiling water for about 5-10 minutes to sterilize the bone and to melt the funk away, so to speak. Then they dump that out and put the bone into water and boil for around 12 hours to extract all the richness and flavor into the broth.

Only one of these is used per batch and then the bag is just dipped in long enough and boiled with the broth to give you the flavor you are looking for.
