Food items I have been looking for. - Mykul - 10-21-2013 There are a couple of things I have been keeping an eye out for but have yet to come across. Thought I would put it out there and see if one of you can point me in the right direction. Sausage casings: I am looking to make some sausages from scratch and would like to get a hold of some hog casings. Anyone know a butcher making their own locally? Duck: breasts, legs or the whole bird, I am not picky. Seems to be hard to find in Mexico. That is what comes to mind right now. I'm sure I will have more questions in due time. RE: Food items I have been looking for. - laconstance - 10-21-2013 Casings: Go to the Mercado Hidalgo and inquire at the stalls along the wall where there are great ropes of sausages hanging. Duck: I remember seeing frozen duck at Mega during the holidays a couple of years ago. RE: Food items I have been looking for. - The Duck - 10-21-2013 Casings/tripas para embutidos most any decent butcher should have them. A friend in Valenciana has kilos of many sausage seasoning mixes he brought in from the States. He goes to a butcher in San Javier and makes his mixes - the casings seem to be included in the process which is just the price of the carne. So casings aren't much of a problem - making a nice tasting sausage is - options here are limited and I think there would be demand for something more than salachidas . Come on Mykul tell us you plan to open a Deli! Duck - I agree with laconstance - I have seen frozen pato in the Mega and more often than just holidays - its frozen! Mega style [ so if for whatever reason it defrosts they'll just re-freeze it ] Hard to trust frozen items anywhere in Mexico and that includes Costco. Not a deli, but I do love to do my own charcuterie, so once I manage to get all the items I need together there will be some great home made stuff on the menu. RE: Food items I have been looking for. - mr bill - 10-22-2013 PATO - I was in the ISSTE supermarket early this morning and the meat counter was advertising Duck - The butcher wasn't in so I was unable to get details but I would guess that it may be an order in advance sort of thing. ISSTE also make their own artesanal sausge and I think marinate their own arrachera. ...and the Maille Dijon is back in stock RE: Food items I have been looking for. - roberb7 - 10-22-2013 Not a deli? Well, Mykul, if you're capable of making a gen-yoo-wine pastrami on rye, I volunteer to go out and kill the cow that would be the source of the pastrami. Robert - Pastrami is definitely on my radar. I have an order of curing salt coming in from the U.S. any day now. Rye bread may be more tricky. If you miss it, you have to do a very large circle to come back because the street is one way. Also available there is real lasagna pasta; the kind you have to boil first, rather than the horrible instant lasagna which is used in a dry state. Other items the day I went in recently: quail eggs, and as mentioned several varieties of higher quality sausage. Duck is available on order at ISSTE, but Mega has duck 365 days out of the year in the freezer case in front of the fish department. Whole ducks at Mega run MX$195 to $235. RE: Food items I have been looking for. - pianoheat - 10-24-2013 You might consider taking your prepared sausage meat to a butcher at the mercado and have them put the sausage in the casings for you.
